Have you ever wondered how olives are processed before reaching your table? Learn about the ins and outs of the production and packaging of our olives.

The quality and excellence of the olive is paramount to us, therefore, as soon as it arrives directly from the olive groves, it goes through a bath to clean any dirt that may be attached to it. Immediately afterwards it goes through a cooking and fermentation process to cure the olive, reaching the perfect point of excellence.

After a time of fermentation, the fruit goes through a screening and selection process, which classifies them according to their caliber, to ensure that each olive is destined for its corresponding place. Our meticulous professionals carry out an exhaustive manual selection process to prevent damaged fruits from passing to the next production phase.

Once selected, the olives are packed in the governing liquid that ensures their freshness upon arrival at our table, giving it its pleasant and mild characteristic flavor. They are ready to be packaged and distributed, but our commitment to customer satisfaction leads us to carry out a final quality test, extracting samples from the batches to be analyzed in our laboratories.
